Super Healthy Sausages

These are packed with protein and fresh veggies. Great for cooking on the campfire!

To make a delicious and healthy version of a breakfast 'fry up' you could also add a poached egg, grilled tomatoes and mushrooms.

Per person

  • 1 chicken breast
  • 1 medium zesty apple, chopped
  • ¾ thin leek, sliced
  • 1 large garlic clove, skinned
  • a large handful of fresh
  • mixed herbs (basil/thyme/oregano,coriander/marjoram, parsley/chives or rosemary/thyme)
  • salt and pepper, to taste
  • olive oil for frying

Put all the ingredients in a food processor and process until you have a fine, mince-like mixture. Use your hands to form the mixture into 4-6 sausage shapes and press them down so they are flat and about 1cm thick (this ensures that they get cooked through properly).

Either heat the olive oil in a pan and fry the sausages for several minutes on both sides until browned and cooked through; or preheat the oven to 200° C/400° F/gas mark 6, put the sausages on a lightly oiled baking sheet and bake them for 20 minutes, turning occasionally.
