We are so often on the go rushing around and it's not always easy to have food to hand in these moments. That's why we've created these delicious snack bars that you can grab anytime, anywhere for that instant hit of energy. Whether you are looking for that mid morning bite to go with your cuppa or a little treat after dinner, these really are great and sustain you till the next meal.
To get started, you will need:
- 200g dates
- 100g coconut oil
- 150g mixed seeds (e.g. 50g flax, 50g pumpkin, 50g sunflower)
- 150g oats
- 1 tsp cinnamon
- A pinch of salt
- Desiccated coconut (optional)
Pop the dates in a pan of 150 ml water, and set it over a low heat. Mix the dates in with the water by pushing them against the side of the pan with the back of a spoon – until they become a smooth paste. Add the coconut oil and stir until melted.
Turn off the heat. Add the seeds and mix thoroughly. Add in the oats, cinnamon and salt and stir until it's a melted mixture.
Transfer the mixture to a lightly oiled square baking tin (Approx 24 x 24 cm) and spread it out evenly with the back of a spoon.
If you like, sprinkle over pieces of desiccated coconut.
You can either let these set in the fridge for 30-60 minutes and eat raw.
Or you can bake them at 180 degrees Celsius/350 degree F/gas mark 4 for 15 minutes until golden brown.
Yummy either way!
